Foxtail Millet Avocado Salad Combo (1kg Foxtail Millet + 500ml Flaxseed Oil + 200g Black Pepper + 500g Organic Groundnuts + 400g Himalayan Pink Salt)

Ingredients 

• Bharat Vedica Foxtail Millet – 1 cup
• Water – 2.5 cups
• Ripe avocados, diced – 2
• Cherry tomatoes, halved – 1 cup
• Cucumber, diced – 1
• Red onion, finely chopped – ¼ cup
• Fresh coriander leaves, chopped – ¼ cup
• Lemon juice – 1
• Extra virgin olive oil – 2 tbsp
• Salt – ½ tsp
• Black pepper, freshly ground – ¼ tsp
• Roasted peanuts or almonds, crushed – ¼ cup

Method

1. Cook the Foxtail Millet 
   Rinse Organic Foxtail Millet thoroughly and soak for 15 to 20 minutes. Drain and cook it with 2.5 cups of water until soft and fluffy. Allow it to cool completely.  
2. Prepare the Fresh Ingredients 
   In a large bowl, combine diced avocado, cherry tomatoes, cucumber, red onion, and fresh coriander leaves.  
3. Create the Dressing 
   Mix lemon juice, extra virgin olive oil, salt, and freshly ground black pepper to create a light and refreshing dressing.  
4. Assemble the Salad 
   Add the cooled foxtail millet to the prepared vegetables. Pour the dressing over it and gently toss to combine, ensuring the flavours blend beautifully. 
5. Add the Final Touch 
   Garnish with crushed roasted peanuts or almonds for a delightful crunch. 
6. Serve Fresh 
   Serve immediately as a nourishing breakfast, light lunch, or a wholesome evening meal.
